The dry ager matures the steak to perfection giving a more concentrated beef flavour and helps the tenderisation of the steak. These dry aged striploin steaks are ideal for barbequing or searing on a very hot pan. The secret to cooking the perfect steak is to cook it as quickly as possible and then let it rest.
